Muffins and Monster Progress

I have been working on this guy for a few days on and off. I love him so far. I seem to love all my monsters though, so it's kind of a mute point. He is another shelf sitter monster. The legs really kill me (in a good way).

I pinned this recipe a while back and have found myself looking at it for a few days now. They are called Morning Glory Muffins. I always forget to actually eat breakfast, so I thought I'd give this recipe a try. This is a behemoth of a recipe.

I made a few changes to it. Since I'm trying not to buy canned anything, I chopped up a fresh pineapple and set it through the food processor. I did cut out some of the oil, replacing it with apple sauce instead and added whole wheat flour as one of the comments said... to cut back on the calorie count. Then I cut the sugar in half. I used walnuts, not pecans.
